Balsamic Roasted Tomato and Hummus Toast Recipe

Ingredients

  • For the Balsamic Roasted Tomatoes:

    • Cherry or Grape Tomatoes: 1 pint (about 2 cups or 300-350g)
    • Extra Virgin Olive Oil: 2 tablespoons
    • Good Quality Balsamic Vinegar: 2 tablespoons
    • Garlic: 2-3 cloves, minced or thinly sliced
    • Dried Oregano or Italian Seasoning: 1 teaspoon
    • Sea Salt: ½ teaspoon, or to taste
    • Freshly Ground Black Pepper: ¼ teaspoon, or to taste

  • For the Hummus Toast:

    • Artisan Bread: 4 thick slices (sourdough, ciabatta, whole wheat, or your favorite sturdy bread)
    • Hummus: 1 cup (store-bought or homemade, plain or flavored)

  • Optional Garnishes:

    • Fresh Basil Leaves: a small handful, chiffonade or whole
    • Fresh Parsley: chopped, for sprinkling
    • Red Pepper Flakes: a pinch, for a touch of heat
    • Balsamic Glaze (reduced balsamic vinegar): for an extra drizzle
    • Flaky Sea Salt: for finishing


Instructions

  1. Preheat Oven and Prepare Tomatoes: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Roast the Tomatoes: In a medium bowl, gently toss the cherry or grape tomatoes with the extra virgin olive oil, balsamic vinegar, minced garlic, dried oregano (or Italian seasoning), sea salt, and freshly ground black pepper. Ensure the tomatoes are evenly coated.
  3. Arrange and Roast: Spread the seasoned tomatoes in a single layer on the prepared baking sheet. Roast in the preheated oven for 20-25 minutes, or until the tomatoes are softened, slightly blistered, and the balsamic vinegar has reduced to a light glaze. You might want to give them a gentle stir halfway through.
  4. Toast the Bread: While the tomatoes are roasting, toast your bread slices until they are golden brown and crispy. You can do this in a toaster, under the broiler (watch carefully to prevent burning!), or on a grill pan.
  5. Assemble the Toast: Once the bread is toasted and the tomatoes are perfectly roasted, it’s time to assemble. Spread a generous layer of hummus (about ¼ cup per slice) evenly over each slice of toasted bread.
  6. Add the Roasted Tomatoes: Spoon the warm balsamic roasted tomatoes, along with any delicious pan juices, over the hummus.
  7. Garnish and Serve: Garnish with fresh basil leaves, chopped parsley, a pinch of red pepper flakes, a drizzle of balsamic glaze, or a sprinkle of flaky sea salt, if desired.
