Instructions
Step 1: Prepare the Oven
- Preheat your oven to 400°F (200°C). This ensures that your eclairs will bake evenly and achieve the desired texture.
Step 2: Make the Pastry Dough
- Combine water and butter in a medium-sized saucepan. Bring the mixture to a boil over medium heat.
- Remove the saucepan from heat and add the all-purpose flour. Stir vigorously until a dough forms and pulls away from the sides of the pan.
- Incorporate the eggs into the dough, adding them one at a time. Make sure to mix well after each addition until the dough is smooth and glossy.
Step 3: Shape and Bake the Eclairs
- Pipe the dough onto a baking sheet lined with parchment paper. Use a piping bag fitted with a large round tip to form long strips, approximately 4 inches long.
- Bake in the preheated oven for 25 minutes until the eclairs are golden brown. Remove them from the oven and let them cool completely on a wire rack.
Step 4: Prepare the Whipped Cream Filling
- Whip the heavy cream with the powdered sugar and vanilla extract in a mixing bowl until soft peaks form. The whipped cream should be light and fluffy.
Step 5: Fill the Eclairs
- Fill a piping bag with the whipped cream mixture. Using a small nozzle, poke a hole at each end of the eclair and fill it with the cream until it feels heavy.
Step 6: Make the Chocolate Topping
- Melt the chocolate chips with coconut oil in a microwave-safe bowl or using a double boiler. Stir until the mixture is smooth and glossy.
Step 7: Finish the Eclairs
- Drizzle the melted chocolate over the filled eclairs. You can also dip the tops of the eclairs into the chocolate for a more uniform coating.
