  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup shredded cheddar cheese
  • 1 avocado, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup chopped cilantro
  • 1 cup tortilla chips, slightly crushed

For the Dressing:

  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

Preparing the Meat

  1. Brown the Meat:

    • In a large skillet over medium heat, cook the ground beef or turkey until browned, breaking it into crumbles as it cooks.

  2. Season the Meat:

    • Drain any excess fat and add the taco seasoning mix. Follow package instructions, typically adding water and simmering until the mixture thickens.

Assembling the Salad

  1. Prepare the Lettuce:

    • Wash and chop the romaine lettuce. Place it in a large salad bowl as the base of your salad.

  2. Add Vegetables:

    • Layer the cherry tomatoes, black beans, corn, and red onion on top of the lettuce.

  3. Include the Meat:

    • Spoon the seasoned meat over the salad.

  4. Garnish with Avocado and Cheese:

    • Add diced avocado and sprinkle shredded cheddar cheese over the salad.
