  • Sauce:

    • 3 tablespoons soy sauce or tamari (for a gluten-free option)
    • 1 tablespoon sesame oil
    • 1 tablespoon rice vinegar
    • 2 cloves of garlic, minced
    • 1 teaspoon grated ginger
    • 1 tablespoon low-carb sweetener (like erythritol or monk fruit)

  • Cooking:

    • 2 tablespoons olive oil or avocado oil
    • Salt and pepper to taste
    • Sesame seeds and sliced green onions for garnish (optional)


Instructions

  1. Prepare the Beef:

    • Season the thinly sliced flank steak with salt and pepper.
    • Heat one tablespoon of olive oil in a large skillet or wok over medium-high heat.
    • Add the beef to the skillet and stir-fry for about 3-4 minutes, or until the beef is browned and cooked to your liking. Remove the beef from the skillet and set it aside.

  2. Cook the Vegetables:

    • In the same skillet, add the remaining tablespoon of olive oil.
    • Add the onion and sauté for about 2 minutes until it becomes translucent.
    • Add the broccoli, bell pepper, snow peas, and zucchini. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.

  3. Make the Sauce:

    • In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, minced garlic, grated ginger, and low-carb sweetener.

  4. Combine Everything:

    • Return the beef to the skillet with the vegetables.
    • Pour the sauce over the beef and vegetables, stirring well to combine.
    • Cook for an additional 2-3 minutes to allow the flavors to meld together.

  5. Garnish and Serve:

    • Remove the skillet from heat.
    • Garnish with sesame seeds and sliced green onions, if desired.
