- 1 tablespoon rice vinegar
- 2 cloves of garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon low-carb sweetener (like erythritol or monk fruit)
- Cooking:
- 2 tablespoons olive oil or avocado oil
- Salt and pepper to taste
- Sesame seeds and sliced green onions for garnish (optional)
Instructions
- Prepare the Beef:
- Season the thinly sliced flank steak with salt and pepper.
- Heat one tablespoon of olive oil in a large skillet or wok over medium-high heat.
- Add the beef to the skillet and stir-fry for about 3-4 minutes, or until the beef is browned and cooked to your liking. Remove the beef from the skillet and set it aside.
- Cook the Vegetables:
- In the same skillet, add the remaining tablespoon of olive oil.
- Add the onion and sauté for about 2 minutes until it becomes translucent.
- Add the broccoli, bell pepper, snow peas, and zucchini. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.
- Make the Sauce:
- In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, minced garlic, grated ginger, and low-carb sweetener.
- Combine Everything:
- Return the beef to the skillet with the vegetables.
- Pour the sauce over the beef and vegetables, stirring well to combine.
- Cook for an additional 2-3 minutes to allow the flavors to meld together.
- Garnish and Serve:
- Remove the skillet from heat.
- Garnish with sesame seeds and sliced green onions, if desired.
