Key Lime Pie Overnight Oats Recipe

  • ½ cup (45g) Rolled Oats (Old-Fashioned Oats, use certified GF if needed)
  • ½ cup (120ml) Milk of your choice (dairy or non-dairy, unsweetened recommended)
  • ¼ cup (60g) Plain Greek Yogurt (or thick dairy-free yogurt for vegan)
  • 1 tablespoon (15g) Chia Seeds
  • 1 ½2 tablespoons (22-30ml) Fresh Key Lime Juice (from about 12 Key limes)
  • 1 teaspoon Key Lime Zest (packed)
  • 12 tablespoons (15-30ml) Pure Maple Syrup (or honey/agave, adjust to taste)
  • ¼ teaspoon Vanilla Extract (optional)
  • For Serving (Optional but Recommended):

    • 12 tablespoons Crushed Graham Cracker Crumbs
    • Extra Lime Zest
    • Dollop of Whipped Cream or Coconut Cream
    • Small Lime Wedge for garnish
    • Toasted Coconut Flakes


Instructions

  1. Zest and Juice the Limes: Thoroughly wash your Key limes. Using a microplane or fine grater, carefully remove the green outer layer (the zest) from 1-2 limes, avoiding the bitter white pith underneath. You should aim for about 1 packed teaspoon of zest. Once zested, cut the limes in half and squeeze out the juice. Measure 1 ½ to 2 tablespoons of fresh juice. Remember: zest before juicing!
  2. Combine Ingredients: Find a jar or container with a lid (a 16oz mason jar works perfectly). Add the rolled oats, milk, Greek yogurt, chia seeds, Key lime juice, Key lime zest, maple syrup (start with the lower amount if unsure), and vanilla extract (if using) to the jar.
  3. Stir Thoroughly: Use a spoon or fork to stir everything together very well. Ensure the chia seeds are evenly distributed and there are no dry clumps of oats or pockets of yogurt. Scrape down the sides of the jar if needed. The mixture should be well combined and relatively liquid – it will thicken considerably as it chills.
  4. Taste and Adjust (Optional): If you like, you can take a tiny taste at this stage to check the sweetness/tartness balance. Remember the flavors will meld and intensify slightly overnight. Add a little more maple syrup or lime juice if desired, stirring again to combine.
  5. Seal and Chill: Secure the lid tightly on the jar or container. Place it in the refrigerator.
  6. Let the Magic Happen: Chill the oats for at least 4 hours, but for the best texture and flavor development, let them rest overnight (ideally 8 hours or longer). The oats will soften, the chia seeds will gel, and all the flavors will meld into creamy, tangy perfection.
  7. Serve: The next morning, give the oats a quick stir. If they seem too thick for your liking, you can add a splash more milk and stir it in. Top with your desired toppings – crushed graham crackers are highly recommended for the authentic pie experience! Add extra zest, a dollop of whipped cream, or toasted coconut if you fancy. Enjoy immediately!
