It started, as many great discoveries do, with a little skepticism. My family, bless their hearts, are generally enthusiastic eaters, but the term “vegan baking” sometimes conjures images of dense, dry, or just plain different desserts. Hummingbird Cake, that classic Southern belle bursting with tropical fruit and pecans, crowned with tangy cream cheese frosting, seemed like a particularly tall order to veganize successfully. Could a version without eggs, butter, or traditional cream cheese possibly capture the moist, flavourful magic of the original? I decided to find out, tweaking and testing until I landed on this very recipe. The first time I served it, I held my breath. Then came the murmurs of approval, the widening eyes, the second helpings requested. “This is amazing,” my notoriously picky nephew declared between mouthfuls, “Are you sure it’s vegan?” That, right there, was the ultimate validation. This Vegan Hummingbird Cake isn’t just “good for vegan”; it’s simply good. Phenomenally good. It’s moist, tender, packed with banana and pineapple sweetness, subtly spiced, studded with crunchy pecans, and slathered in a luscious, tangy vegan cream cheese frosting that rivals any dairy version. It converted the skeptics in my house, and I have a feeling it might just do the same in yours. It’s become our go-to celebration cake, perfect for birthdays, holidays, or just a Tuesday that needs a little sunshine.

Ingredients
For the Vegan Hummingbird Cake:
- Flax Eggs:
- 2 tablespoons ground flaxseed
- 6 tablespoons water
- Dry Ingredients:
- 3 cups (360g) all-purpose flour (spooned and leveled)
- 1 ½ cups (300g) granulated sugar
- ½ cup (100g) packed light brown sugar
- 1 ½ teaspoons baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground ginger (optional, adds warmth)
- ½ teaspoon salt
- Wet Ingredients:
- 1 cup (240ml) unsweetened plant-based milk (almond, soy, or oat work well)
- 1 teaspoon apple cider vinegar (or white vinegar)
- ¾ cup (180ml) neutral vegetable oil (like canola, sunflower, or melted refined coconut oil)
- 1 teaspoon pure vanilla extract
- Fruit and Nuts:
- 1 ½ cups (about 340g) mashed very ripe bananas (about 3 large bananas)
- 1 can (8 ounces / 227g) crushed pineapple in juice, well-drained (reserve juice for potential frosting use if desired)
- 1 cup (115g) chopped pecans, lightly toasted (plus more for decoration)
For the Vegan Cream Cheese Frosting:
- 1 cup (226g) vegan butter, softened (use a good quality stick-style brand for best results)
- 1 package (8 ounces / 226g) vegan cream cheese, softened (ensure it’s block-style, not tub-style, and softened but still cool)
- 4-5 cups (480-600g) powdered sugar, sifted
- 1 ½ teaspoons pure vanilla extract
- 1-2 tablespoons unsweetened plant-based milk or reserved pineapple juice (optional, only if needed to reach desired consistency)
- Pinch of salt (optional, enhances flavour)
Instructions
1. Prepare Flax Eggs and Vegan Buttermilk:
- In a small bowl, combine the ground flaxseed and water. Stir well and set aside for at least 5-10 minutes to thicken into a gel-like consistency. This is your flax egg mixture, acting as a binder.
- In a separate small bowl or measuring cup, combine the plant-based milk and apple cider vinegar. Stir briefly and set aside for 5-10 minutes. It will curdle slightly, creating a vegan “buttermilk” which adds tenderness to the cake.
2. Preheat Oven and Prepare Pans:
- Position a rack in the center of your oven and preheat to 350°F (175°C).
- Grease and flour two 8-inch or 9-inch round cake pans. Alternatively, line the bottoms with parchment paper rounds and grease/flour the sides. This ensures the cakes release easily.
3. Combine Dry Ingredients:
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, light brown sugar, baking soda, cinnamon, nutmeg, optional ginger, and salt. Whisking thoroughly ensures the leavening agents and spices are evenly distributed, which is crucial for a consistent rise and flavour.
4. Combine Wet Ingredients:
- In a separate medium bowl, whisk together the prepared vegan buttermilk, vegetable oil, prepared flax eggs, and vanilla extract until well combined.
5. Combine Wet and Dry Mixtures:
- Pour the wet ingredients into the large bowl containing the dry ingredients. Mix with a spatula or wooden spoon just until combined. Be careful not to overmix at this stage; a few small lumps are perfectly fine. Overmixing develops the gluten in the flour, which can lead to a tough or dense cake texture.
6. Fold in Fruit and Nuts:
- Add the mashed ripe bananas, well-drained crushed pineapple, and chopped toasted pecans to the batter. Gently fold them in using a spatula until evenly distributed. Again, avoid overmixing. The batter will be thick and textured. Toasting the pecans beforehand enhances their nutty flavour and improves their texture within the cake. Ensure the pineapple is very well-drained to prevent excess moisture making the cake soggy. Press it firmly in a sieve or squeeze it in cheesecloth.
7. Divide Batter and Bake:
- Divide the batter evenly between the two prepared cake pans. Smooth the tops gently with the back of a spoon or an offset spatula.
- Place the pans in the preheated oven. Bake for 30-40 minutes, or until a wooden skewer or toothpick inserted into the center of the cakes comes out clean or with a few moist crumbs attached (but no wet batter). Baking times can vary depending on your oven and pan size (8-inch pans might take slightly longer than 9-inch). Start checking around the 30-minute mark. The cakes should be golden brown and spring back lightly when touched.
8. Cool the Cakes:
- Once baked, carefully remove the cake pans from the oven and place them on a wire cooling rack. Let the cakes cool in the pans for 15-20 minutes. This allows them to set slightly and prevents them from breaking when unmolded.
- After 15-20 minutes, run a thin knife or offset spatula around the edges of the pans to loosen the cakes. Invert the cakes onto the wire rack, peel off the parchment paper if used, and let them cool completely before frosting. This step is critical – attempting to frost warm cakes will result in melted, sliding frosting. Allow at least 1-2 hours for complete cooling.
9. Make the Vegan Cream Cheese Frosting:
- Ensure your vegan butter and vegan cream cheese are softened but still slightly cool. If they are too warm, the frosting will be runny.
- In a large bowl using a hand mixer or a stand mixer fitted with the paddle attachment, beat the softened vegan butter on medium speed until smooth and creamy (about 1-2 minutes).
- Add the softened vegan cream cheese and beat again on medium speed until well combined and smooth, scraping down the sides of the bowl as needed. Don’t overbeat at this stage, as some vegan cream cheeses can become too soft.
- Turn the mixer speed to low and gradually add the sifted powdered sugar, about one cup at a time, mixing until just incorporated after each addition. Sifting prevents lumps.
- Once all the sugar is mostly incorporated, add the vanilla extract and the optional pinch of salt. Increase the mixer speed to medium-high and beat for 2-3 minutes until the frosting is light, fluffy, and smooth.
- Check the consistency. If the frosting seems too stiff, add plant-based milk or reserved pineapple juice, one teaspoon at a time, beating until you reach the desired spreadable consistency. If it seems too soft, you can try chilling it for 15-20 minutes or beating in a little more sifted powdered sugar (add cautiously).
10. Assemble and Frost the Cake:
- Once the cake layers are completely cool, you can level them if needed. Use a long serrated knife to carefully slice off any domed tops so the layers are flat, ensuring a stable and even final cake. (The cake scraps are delicious for snacking!).
- Place one cake layer, cut-side up (if leveled), onto your serving plate or cake stand.
- Spread a generous layer of the vegan cream cheese frosting evenly over the top of the first layer – about 1 cup of frosting should suffice.
- Carefully place the second cake layer on top, either cut-side down (if leveled) or top-side down.
- Apply a thin layer of frosting all over the top and sides of the cake. This is called a “crumb coat” and helps trap any loose crumbs, ensuring your final layer of frosting is clean and beautiful. Chill the crumb-coated cake in the refrigerator for about 20-30 minutes to firm up the frosting.
- Once the crumb coat is set, apply the remaining frosting generously over the top and sides of the cake, using an offset spatula or bench scraper to smooth it out or create decorative swirls.
- Garnish the cake as desired. Press extra chopped toasted pecans around the base or sprinkle them over the top. You could also add dried pineapple flowers or small pieces of candied ginger for an extra touch.
11. Chill and Serve:
- For the best flavour and texture, and to allow the frosting to set completely, it’s recommended to chill the frosted cake in the refrigerator for at least 30 minutes to an hour before slicing and serving.
- Remove the cake from the refrigerator about 15-20 minutes before serving to allow it to come closer to room temperature for optimal flavour and texture. Slice with a sharp knife, wiping the blade clean between cuts for neat slices.

How to Serve Your Vegan Hummingbird Cake
Serving this delightful cake is an event in itself. Here’s how to make the most of it:
- Temperature is Key: This cake is best served at cool room temperature. If stored in the refrigerator, allow slices to sit out for 15-20 minutes before serving. This allows the cake’s crumb to soften slightly and the flavours (especially the spices and fruit) to become more pronounced. The frosting will also soften slightly from its chilled state, making it even more luscious.
- Occasions Galore: This Vegan Hummingbird Cake is incredibly versatile and suits numerous occasions:
- Celebrations: Perfect as a birthday cake, anniversary dessert, or for Easter brunch.
- Holidays: A wonderful addition to Thanksgiving or Christmas dessert tables, offering a bright, fruity contrast to heavier options.
- Potlucks & Gatherings: It travels reasonably well (keep it cool) and is always a crowd-pleaser, often surprising guests that it’s vegan.
- Afternoon Tea: Serve smaller slices alongside a selection of teas for an elegant treat.
- Just Because: Sometimes you just need a slice of comforting, delicious cake!
- Garnishes for Extra Flair: Elevate the presentation with simple garnishes:
- Toasted Pecans: The classic choice. Sprinkle chopped toasted pecans generously over the top or press them gently around the base of the cake. Whole pecan halves can also be arranged artfully on top.
- Toasted Coconut Flakes: Adds another layer of tropical flavour and texture. Use unsweetened flakes for the best result.
- Dried Pineapple Flowers: Create these by thinly slicing fresh pineapple, patting it very dry, and baking at a low temperature until dried and slightly curled. They look stunning.
- Fresh Mint Sprigs: A pop of green adds visual appeal and a hint of freshness.
- Edible Flowers: For a truly special occasion, garnish with carefully selected edible flowers like pansies or violas (ensure they are food-grade).
- Perfect Pairings: Complement the cake’s flavours with the right beverage:
- Coffee: A classic pairing. A medium roast coffee balances the cake’s sweetness beautifully.
- Tea: Black tea (like Earl Grey or English Breakfast) or a spiced chai tea works wonderfully. Herbal teas like chamomile or ginger tea are also good options.
- Plant-Based Milk: A simple glass of cold almond, soy, or oat milk is always comforting alongside cake.
- Dessert Wine: For an adult treat, consider a late-harvest Riesling or a Moscato d’Asti, whose sweetness and acidity complement the fruit notes.
- Presentation Matters:
- Cake Stand: Displaying the cake on a stand immediately makes it feel more special.
- Serving Utensils: Use a dedicated cake server for clean slicing and serving.
- Plates: Serve on attractive dessert plates that allow the slice to shine.
Additional Tips for Vegan Hummingbird Cake Perfection
Achieving the perfect Vegan Hummingbird Cake involves a few key details. Follow these tips for guaranteed success:
- Banana Ripeness is Crucial: Don’t underestimate the importance of using very ripe bananas – the kind that are heavily speckled with brown or even mostly black. Overripe bananas are significantly sweeter and have a much more intense banana flavour, which is essential for the characteristic taste of Hummingbird Cake. They also contribute significantly to the cake’s moisture. Underripe or just-ripe yellow bananas will result in a less flavourful and potentially drier cake. Mash them thoroughly, leaving only small lumps for texture.
- Master the Mix: Don’t Overmix! This is perhaps the single most important tip for achieving a tender cake crumb, especially in vegan baking. Once you combine the wet and dry ingredients, mix only until they are just incorporated. It’s okay if there are still a few small streaks of flour. The same applies when folding in the fruit and nuts. Overmixing develops the gluten in the flour, leading to a cake that is tough, dense, or rubbery instead of light and tender. Gentle folding is key.
- Drain That Pineapple Thoroughly: Hummingbird Cake batter is already quite moist due to the bananas and oil. Adding pineapple packed in juice introduces even more liquid. It is essential to drain the crushed pineapple extremely well. Press it firmly against the sides of a fine-mesh sieve with the back of a spoon, or even squeeze it gently in a clean kitchen towel or cheesecloth to remove as much excess juice as possible. Failing to do this can result in a cake that is overly wet, dense in the middle, or even struggles to bake through properly, potentially leading to a gummy texture.
- Patience in Cooling: Resist the urge to frost the cake layers while they are still warm, or even slightly warm. Warm cake + cool frosting = melted, sliding mess. Allow the cake layers to cool completely on a wire rack after the initial 15-20 minutes of cooling in the pans. This can take 1-2 hours at room temperature. Complete cooling ensures the cake structure is firm and stable, and the frosting will adhere properly and hold its shape without melting or causing the layers to slip.
- Frosting Consistency Control: Vegan cream cheese frostings can sometimes be finicky depending on the brands of vegan butter and cream cheese used, and the ambient temperature. Aim for softened but still cool ingredients. If your frosting seems too soft or runny (especially in warm weather), try chilling the bowl in the refrigerator for 15-20 minute intervals, beating briefly between chilling, until it firms up. Alternatively, beat in more sifted powdered sugar, a few tablespoons at a time. If the frosting is too stiff, beat in a tiny amount (start with 1 teaspoon) of unsweetened plant milk or reserved pineapple juice until it reaches a smooth, spreadable consistency. Adjust cautiously to avoid making it too thin.
Frequently Asked Questions (FAQ)
Q1: Can I make this Vegan Hummingbird Cake gluten-free?
A: Yes, you likely can adapt this recipe to be gluten-free. The best approach is to use a high-quality, measure-for-measure (1:1) gluten-free all-purpose flour blend that contains xanthan gum. Brands like Bob’s Red Mill 1-to-1 Baking Flour or King Arthur Baking Measure for Measure Gluten Free Flour are often recommended. Keep in mind that the texture might be slightly different from the original – potentially a bit denser or crumblier, depending on the specific flour blend used. Ensure all other ingredients are certified gluten-free if catering to celiac disease. No other major adjustments should be needed, but keep an eye on the baking time as GF cakes can sometimes bake slightly faster or slower.
Q2: I don’t like pecans / I have a nut allergy. Can I use different nuts or omit them?
A: Absolutely! While pecans are traditional in Hummingbird Cake, you have options:
- Other Nuts: Walnuts are a fantastic substitute and pair beautifully with the banana and spice flavours. Toast them lightly just like the pecans for enhanced flavour.
- Nut-Free: You can simply omit the nuts altogether for a nut-free version. The cake will still be delicious, just without the nutty crunch.
- Seeds: For some added texture without nuts, consider adding about ½ cup of shelled sunflower seeds or pumpkin seeds (pepitas).
- Coconut: Increase the tropical vibe by adding ½ cup of shredded, unsweetened coconut along with the pineapple and banana. Ensure it’s unsweetened to avoid making the cake overly sweet.
Q3: How should I store leftover Vegan Hummingbird Cake?
A: Due to the vegan cream cheese frosting, this cake should be stored in the refrigerator. Place leftover cake in an airtight container (or cover tightly with plastic wrap on a plate) to prevent it from drying out or absorbing fridge odours. It will keep well in the refrigerator for up to 4-5 days. For the best taste and texture, allow slices to sit at room temperature for about 15-20 minutes before serving to take the chill off.
Q4: Can I make this cake ahead of time?
A: Yes, this cake is well-suited for making ahead, which can be very convenient:
- Cake Layers: You can bake the cake layers up to 1-2 days in advance. Once completely cooled, wrap them tightly in plastic wrap and store them at room temperature (if frosting within a day) or in the refrigerator. For longer storage, you can freeze the well-wrapped layers for up to 2 months. Thaw them overnight in the refrigerator or for a few hours at room temperature before frosting.
- Frosting: The vegan cream cheese frosting can be made up to 3 days ahead. Store it in an airtight container in the refrigerator. Before using, let it sit at room temperature for about 30-60 minutes to soften slightly, then give it a good beat with your mixer to restore its fluffy texture. You might need to add a teaspoon of plant milk if it’s too stiff after chilling.
- Assembled Cake: You can assemble and frost the entire cake a day in advance and store it covered in the refrigerator. This actually allows the flavours to meld nicely. Just remember to let it sit out briefly before serving.
Q5: My vegan cream cheese frosting is too soft/runny or too stiff. What did I do wrong, and how can I fix it?
A: Frosting consistency issues are common, especially with vegan versions. Here’s a breakdown:
- Too Soft/Runny: This usually happens if your vegan butter or cream cheese was too warm when you started, if your kitchen is very warm, or if the brand of vegan cream cheese used is naturally softer (tub-style vs. block-style is often a factor – use block-style!).
- Fix: The primary fix is chilling. Place the entire bowl of frosting in the refrigerator for 15-30 minutes, then beat it again. Repeat if necessary. You can also try beating in more sifted powdered sugar, ¼ cup at a time, until it thickens. Be cautious, as too much sugar can make it overly sweet.
- Too Stiff: This might happen if your butter/cream cheese was too cold, you added too much powdered sugar, or after refrigeration.
- Fix: Let the frosting sit at room temperature for 15-20 minutes to soften slightly. Then, beat it again. If it’s still too stiff, add a very small amount (start with 1 teaspoon) of unsweetened plant-based milk or leftover pineapple juice and beat until it reaches the desired spreadable consistency. Add liquid very gradually to avoid making it too thin.
