Blender Breakfast Muffins Recipe

  • 2 ripe bananas
  • 1 cup oats (gluten-free if needed)
  • 2 eggs
  • 1/2 cup Greek yogurt (or dairy-free yogurt)
  • 1/4 cup honey (or maple syrup)
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 cup mixed berries (fresh or frozen)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a blender, combine the bananas, oats, eggs, yogurt, honey, baking powder, and cinnamon. Blend until smooth to ensure an even texture.
  3. Gently fold in the mixed berries to distribute them evenly throughout the batter without breaking them apart.
  4. Pour the batter into the muffin tin, filling each cup about 2/3 full to allow room for rising.
  5. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  6. Let the muffins cool for a few minutes before enjoying them warm or at room temperature.
