- 2 ripe bananas
- 1 cup oats (gluten-free if needed)
- 2 eggs
- 1/2 cup Greek yogurt (or dairy-free yogurt)
- 1/4 cup honey (or maple syrup)
- 1 tsp baking powder

- 1/2 cup mixed berries (fresh or frozen)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a blender, combine the bananas, oats, eggs, yogurt, honey, baking powder, and cinnamon. Blend until smooth to ensure an even texture.
- Gently fold in the mixed berries to distribute them evenly throughout the batter without breaking them apart.
- Pour the batter into the muffin tin, filling each cup about 2/3 full to allow room for rising.
- Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool for a few minutes before enjoying them warm or at room temperature.
