Instructions
- Prepare the Cauliflower Rice:
- Remove the leaves and stem from the cauliflower and cut it into florets.
- Place the florets in a food processor and pulse until they resemble rice grains. Be careful not to over-process.
- Alternatively, you can use pre-packaged cauliflower rice for convenience.
- Cook the Vegetables:
- Heat 1 tablespoon of sesame oil in a large pan over medium heat.
- Add the minced garlic and chopped onion, sautéing until they become fragrant and translucent.
- Stir in the mixed vegetables and cook for about 5-7 minutes until they are tender.
- Scramble the Eggs:
- Push the vegetables to one side of the pan and pour the beaten eggs onto the other side.
- Stir continuously until the eggs are fully cooked and scrambled.
- Mix the eggs with the vegetables.
- Add the Cauliflower Rice:
- Increase the heat to medium-high and add the riced cauliflower to the pan.
- Stir well to combine with the vegetables and eggs, allowing the cauliflower to cook for about 5 minutes.
- Season the Dish:
- Add the soy sauce, oyster sauce (if using), and grated ginger to the pan.
- Season with salt and pepper to taste, stirring to ensure all ingredients are well-coated with the sauces.
- Incorporate Protein (Optional):
- If using a protein, add the cooked and diced chicken, shrimp, or tofu to the pan.
- Stir until everything is well-combined and heated through.
- Finish with Garnishes:
- Turn off the heat and sprinkle the chopped green onions and sesame seeds over the dish.
- Give it one final stir to distribute the garnishes evenly.
