  • 2 large eggs, beaten
  • 3 tablespoons of soy sauce or tamari for a gluten-free option
  • 1 tablespoon of oyster sauce (optional)
  • 1 teaspoon of ginger, grated
  • Salt and pepper to taste
  • 2 green onions, chopped
  • 1 tablespoon of sesame seeds (optional)
  • Protein of choice (e.g., chicken, shrimp, tofu), cooked and diced (optional)

Instructions

  1. Prepare the Cauliflower Rice:

    • Remove the leaves and stem from the cauliflower and cut it into florets.
    • Place the florets in a food processor and pulse until they resemble rice grains. Be careful not to over-process.
    • Alternatively, you can use pre-packaged cauliflower rice for convenience.

  2. Cook the Vegetables:

    • Heat 1 tablespoon of sesame oil in a large pan over medium heat.
    • Add the minced garlic and chopped onion, sautéing until they become fragrant and translucent.
    • Stir in the mixed vegetables and cook for about 5-7 minutes until they are tender.

  3. Scramble the Eggs:

    • Push the vegetables to one side of the pan and pour the beaten eggs onto the other side.
    • Stir continuously until the eggs are fully cooked and scrambled.
    • Mix the eggs with the vegetables.

  4. Add the Cauliflower Rice:

    • Increase the heat to medium-high and add the riced cauliflower to the pan.
    • Stir well to combine with the vegetables and eggs, allowing the cauliflower to cook for about 5 minutes.

  5. Season the Dish:

    • Add the soy sauce, oyster sauce (if using), and grated ginger to the pan.
    • Season with salt and pepper to taste, stirring to ensure all ingredients are well-coated with the sauces.

  6. Incorporate Protein (Optional):

    • If using a protein, add the cooked and diced chicken, shrimp, or tofu to the pan.
    • Stir until everything is well-combined and heated through.

  7. Finish with Garnishes:

    • Turn off the heat and sprinkle the chopped green onions and sesame seeds over the dish.
    • Give it one final stir to distribute the garnishes evenly.

  8. Serve Immediately:

    • Transfer the cauliflower fried rice to a serving dish and enjoy it hot.
