  • Author: Victoria

Ingredients

Scale

  • 1 pound of ground turkey
  • 1 tablespoon of olive oil
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can (15 oz) of diced tomatoes
  • 1 can (15 oz) of tomato sauce
  • 1 can (15 oz) of kidney beans, drained and rinsed
  • 1 can (15 oz) of black beans, drained and rinsed
  • 2 tablespoons of chili powder
  • 1 teaspoon of ground cumin
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
  • 1/2 teaspoon of cayenne pepper (optional for spice)
  • 1 cup of chicken or vegetable broth
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Prepare the Ingredients:

    • Chop the onions, garlic, and bell peppers.
    • Drain and rinse the beans.

  2. Cook the Ground Turkey:

    • In a large pot or Dutch oven, heat the olive oil over medium heat.
    • Add the ground turkey and cook until browned, breaking it up with a wooden spoon as it cooks. This should take about 5-7 minutes.
    • Season with salt and pepper to taste.

  3. Sauté the Vegetables:

    • Add the chopped onion and garlic to the pot and sauté for about 3 minutes until the onion becomes translucent.
    • Stir in the red and green bell peppers and continue to cook for an additional 5 minutes until the peppers soften.

  4. Add the Spices:

    • Stir in the chili powder, cumin, smoked paprika, oregano, and cayenne pepper (if using).
    • Cook for 1-2 minutes until the spices are fragrant.

  5. Combine with Tomatoes and Beans:

    • Add the diced tomatoes, tomato sauce, kidney beans, and black beans to the pot.
    • Stir in the chicken or vegetable broth to combine all ingredients.

  6. Simmer the Chili:

    • Bring the mixture to a boil, then reduce the heat to low.
    • Cover and let it simmer for at least 30 minutes, stirring occasionally. The longer you let it simmer, the more the flavors will deepen.

  7. Finish and Serve:

    • Stir in the lime juice to brighten the flavors.
    • Taste and adjust seasoning if necessary.
    • Garnish with fresh cilantro before serving.
