- 1 pound of ground turkey
- 1 tablespoon of olive oil
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can (15 oz) of diced tomatoes
- 1 can (15 oz) of tomato sauce
- 1 can (15 oz) of kidney beans, drained and rinsed
- 1 can (15 oz) of black beans, drained and rinsed
- 2 tablespoons of chili powder
- 1 teaspoon of ground cumin
- 1 teaspoon of smoked paprika
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- 1/2 teaspoon of cayenne pepper (optional for spice)
- 1 cup of chicken or vegetable broth
- Juice of 1 lime
- Fresh cilantro for garnish
Instructions
- Prepare the Ingredients:
- Chop the onions, garlic, and bell peppers.
- Drain and rinse the beans.
- Cook the Ground Turkey:
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the ground turkey and cook until browned, breaking it up with a wooden spoon as it cooks. This should take about 5-7 minutes.
- Season with salt and pepper to taste.
- Sauté the Vegetables:
- Add the chopped onion and garlic to the pot and sauté for about 3 minutes until the onion becomes translucent.
- Stir in the red and green bell peppers and continue to cook for an additional 5 minutes until the peppers soften.
- Add the Spices:
- Stir in the chili powder, cumin, smoked paprika, oregano, and cayenne pepper (if using).
- Cook for 1-2 minutes until the spices are fragrant.
- Combine with Tomatoes and Beans:
- Add the diced tomatoes, tomato sauce, kidney beans, and black beans to the pot.
- Stir in the chicken or vegetable broth to combine all ingredients.
- Simmer the Chili:
- Bring the mixture to a boil, then reduce the heat to low.
- Cover and let it simmer for at least 30 minutes, stirring occasionally. The longer you let it simmer, the more the flavors will deepen.
- Finish and Serve:
- Stir in the lime juice to brighten the flavors.
- Taste and adjust seasoning if necessary.
- Garnish with fresh cilantro before serving.
