Ingredients
Scale
- 2 chicken breasts
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon paprika
- 1 cup chicken broth
- 1 cup heavy cream (or coconut cream)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the Olive Oil: In a large pan, heat 1 tablespoon of olive oil over medium heat.
- Sauté Onion and Garlic: Add the chopped onion and minced garlic to the pan. Sauté until the onion is softened and translucent, stirring occasionally to prevent burning.
- Season the Chicken: Season the chicken breasts with salt, pepper, and 1 tablespoon of paprika, ensuring they are evenly coated.
- Cook the Chicken: Add the seasoned chicken breasts to the pan and cook until browned on both sides. This should take about 5 minutes per side.
- Simmer with Chicken Broth: Pour in 1 cup of chicken broth and bring to a simmer. Cover the pan with a lid and let the chicken cook for 15 minutes, allowing the flavors to meld.
- Prepare the Creamy Sauce: Remove the chicken from the pan and set aside. Stir in 1 cup of heavy cream (or coconut cream) into the pan and simmer for 5 minutes until the sauce has thickened to your desired consistency.
- Coat the Chicken in Sauce: Return the chicken breasts to the pan, turning them to coat evenly in the creamy paprika sauce.
- Garnish and Serve: Garnish with fresh parsley before serving the chicken warm.
