French Toast Roll-Ups Recipe

  • For the French Toast:

    • Bread: 10-12 slices of soft white sandwich bread (crusts removed) – Brioche or Challah also work wonderfully for a richer flavor.
    • Eggs: 2 large eggs
    • Milk: 1/4 cup (60ml) whole milk (or any milk of your choice – almond, soy, oat)
    • Vanilla Extract: 1 teaspoon pure vanilla extract
    • Ground Cinnamon: 1/2 teaspoon (for the egg mixture)
    • Butter: 3-4 tablespoons unsalted butter, for frying

  • For the Filling (Choose One or Offer Variety!):

    • Classic Cream Cheese Filling:

      • 4 oz (113g) cream cheese, softened
      • 2 tablespoons powdered sugar (or to taste)
      • 1/2 teaspoon vanilla extract (optional)

    • Strawberry Jam Filling: Approx. 1/2 cup strawberry jam or preserves
    • Nutella Filling: Approx. 1/2 cup Nutella or other chocolate-hazelnut spread
    • Peanut Butter & Banana: Creamy peanut butter and thinly sliced banana

  • For the Cinnamon-Sugar Coating:

    • Granulated Sugar: 1/2 cup (100g)
    • Ground Cinnamon: 1 tablespoon (or to taste – some like it extra cinnamony!)


Instructions

Phase 1: Preparation is Key

  1. Prepare the Bread:

    • Carefully cut the crusts off each slice of bread. Don’t discard them! You can toast them for croutons or make breadcrumbs.
    • Using a rolling pin, flatten each slice of bread as thinly as possible without tearing it. This step is crucial for easy rolling and a good texture. Aim for about 1/8 inch thickness. Set aside.

  2. Mix the Filling (if using homemade like cream cheese):

    • In a small bowl, combine the softened cream cheese, powdered sugar, and vanilla extract (if using for the cream cheese filling). Beat with a fork or a small whisk until smooth and creamy. If using jam or Nutella, ensure it’s at a spreadable consistency.

  3. Prepare the Egg Wash:

    • In a shallow dish or pie plate (wide enough to dip the bread rolls), whisk together the 2 large eggs, 1/4 cup milk, 1 teaspoon vanilla extract, and 1/2 teaspoon ground cinnamon until well combined and slightly frothy.

  4. Prepare the Cinnamon-Sugar Coating:

    • In another shallow dish or on a plate, combine the 1/2 cup granulated sugar and 1 tablespoon ground cinnamon. Mix thoroughly. Set aside.

Phase 2: Assemble the Roll-Ups

  1. Spread the Filling:

    • Take one flattened slice of bread. Spread a thin, even layer of your chosen filling over one side of the bread, leaving a small (about 1/4-inch) border on one of the shorter edges. Be careful not to overfill, as this can cause the filling to ooze out excessively during cooking. About 1-2 teaspoons of filling per slice is usually sufficient.

  2. Roll it Up:

    • Carefully roll the bread slice up tightly, starting from the edge opposite the clean border. The clean border will help seal the roll. Press the seam gently to help it stay closed. Repeat with the remaining bread slices and filling.

Phase 3: Cooking to Golden Perfection

  1. Heat the Pan:

    • Place a large non-stick skillet or griddle over medium heat. Add about 1 tablespoon of butter and allow it to melt and lightly foam. Swirl to coat the bottom of the pan. You want the pan hot enough to sizzle but not so hot that the butter burns immediately.

  2. Dip and Cook:

    • Working in batches to avoid overcrowding the pan, take one roll-up and quickly dip it into the egg wash mixture, ensuring all sides are lightly coated. Don’t let it soak for too long, or it will become soggy. A quick roll is all you need.
    • Immediately place the dipped roll-up, seam-side down if possible, onto the hot, buttered skillet.
    • Cook for 2-3 minutes per side, turning gently with tongs, until all sides are beautifully golden brown and crispy. Add more butter to the pan as needed between batches to prevent sticking and ensure a rich flavor.

Phase 4: The Finishing Touch

  1. Coat with Cinnamon Sugar:

    • As soon as each French Toast Roll-Up is cooked and golden, immediately transfer it from the skillet to the dish with the cinnamon-sugar mixture.
    • Roll it gently in the cinnamon sugar until it’s evenly coated on all sides. The heat from the roll-up will help the sugar adhere beautifully.

  2. Serve and Enjoy:

    • Place the coated roll-ups on a serving platter. Serve warm for the best experience!
