Iced Strawberry Green Tea Recipe

Ingredients

  • For the Green Tea:

    • Water: 4 cups (960 ml), filtered for best taste

  • For the Strawberry Syrup:

    • Fresh Strawberries: 2 cups (approx. 300-350g), hulled and sliced (reserve a few for garnish if desired)
    • Granulated Sugar: 1/2 cup (100g) (adjust to taste, can substitute with honey, agave, or maple syrup – amounts may vary)
    • Water: 1/2 cup (120 ml)
    • Lemon Juice: 1 tablespoon, freshly squeezed (optional, but enhances strawberry flavor and brightness)

  • For Assembling the Iced Tea:

    • Ice Cubes: Plenty, for serving
    • Cold Water (Optional): 1-2 cups (240-480 ml), to dilute to desired strength
    • Fresh Mint Sprigs (Optional): For garnish
    • Fresh Strawberry Slices (Optional): For garnish


Instructions

Part 1: Brew the Green Tea

  1. Heat Water: Bring the 4 cups of filtered water to a near boil. For green tea, the ideal temperature is around 175-185°F (80-85°C). If your kettle doesn’t have a temperature setting, bring it to a boil and then let it sit for about a minute to cool slightly. This prevents the green tea from becoming bitter.
  2. Steep the Tea: Pour the hot water over your green tea bags (or loose leaf tea in an infuser) in a heatproof pitcher or teapot.
  3. Steep Time: Allow the tea to steep for 3-5 minutes. Do not over-steep, as this can also lead to a bitter taste. The goal is a delicate, fragrant brew.
  4. Remove Tea: Once steeped, remove the tea bags or infuser. If using loose leaf tea without an infuser, strain the tea through a fine-mesh sieve.
  5. Cool Down: Let the brewed green tea cool to room temperature. To speed up this process, you can place the pitcher in an ice bath or transfer it to the refrigerator once it’s no longer piping hot. It’s crucial to cool the tea before adding ice directly to avoid excessive dilution and a watery taste.

Part 2: Prepare the Fresh Strawberry Syrup

  1. Combine Ingredients: In a small saucepan, combine the 2 cups of sliced fresh strawberries, 1/2 cup of granulated sugar, and 1/2 cup of water. If using, add the 1 tablespoon of fresh lemon juice now.
  2. Cook the Syrup: Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally to help dissolve the sugar.
  3. Simmer and Muddle: Once simmering, reduce the heat to low. Let it simmer for about 10-15 minutes. As the strawberries soften, gently muddle or mash them against the side of the saucepan with a spoon or potato masher to release their juices and color. The mixture will thicken slightly and become beautifully vibrant.
  4. Strain the Syrup (Optional but Recommended): For a smoother iced tea, strain the strawberry syrup through a fine-mesh sieve into a clean bowl or jar. Press down on the solids with the back of a spoon to extract as much liquid as possible. Discard the solids (or save them for topping yogurt or oatmeal). If you prefer a more rustic tea with some fruit pulp, you can skip the straining or only strain lightly.
  5. Cool the Syrup: Allow the strawberry syrup to cool completely. You can place it in the refrigerator to expedite cooling.

Part 3: Assemble Your Iced Strawberry Green Tea

  1. Combine Tea and Syrup: Once both the green tea and strawberry syrup are cooled, pour the strawberry syrup into the pitcher of cooled green tea. Stir well to combine.
  2. Taste and Adjust: At this point, taste your iced tea. If you prefer it sweeter, you can add a little more of your chosen sweetener (dissolve sugar in a little hot water first, or use liquid sweeteners). If it’s too strong, you can dilute it with 1-2 cups of cold water until it reaches your desired taste.
  3. Chill Thoroughly: For the best flavor, cover the pitcher and refrigerate the Iced Strawberry Green Tea for at least 1 hour, or until thoroughly chilled. This allows the flavors to meld together beautifully.
