Lentil Soup Recipe

Ingredients

Scale
    • 1 cup of lentils (green or brown, rinsed and drained)

    • 1 tablespoon olive oil

    • 1 medium onion, chopped

    • 2 cloves garlic, minced

    • 2 carrots, diced

    • 2 celery stalks, diced

    • 1 can (14.5 ounces) diced tomatoes, with juice

    • 6 cups vegetable broth or water

    • 1 bay leaf

    • 1 teaspoon ground cumin

    • 1 teaspoon ground coriander

    • 1/2 teaspoon smoked paprika

    • Salt and pepper, to taste

    • 1 tablespoon lemon juice

    • Fresh parsley, chopped, for garnish

Optional Add-ins:

    • 1 cup spinach or kale, chopped

    • 1/2 teaspoon red pepper flakes, for heat

    • 1 potato, diced


Instructions

    1. Prepare the Ingredients:
        • Rinse and drain the lentils under cold water. Set aside.

        • Chop the onion, carrots, and celery into small, uniform pieces. Mince the garlic.

    1. Sauté the Aromatics:
        • In a large pot, heat the olive oil over medium heat.

        • Add the chopped onion and sauté until translucent, about 5 minutes.

        • Stir in the minced garlic, diced carrots, and celery. Cook for another 3-4 minutes until the vegetables begin to soften.

    1. Add the Tomatoes and Spices:
        • Pour in the diced tomatoes with their juice.

        • Stir in the cumin, coriander, smoked paprika, salt, and pepper. Cook for 1-2 minutes until the spices are aromatic.

    1. Simmer the Soup:
        • Add the lentils, vegetable broth, and bay leaf to the pot. Stir to combine.

        • Bring the mixture to a boil, then reduce the heat to low.

        • Cover and simmer for 25-30 minutes, or until the lentils are tender.

    1. Finish with Flavor:
        • If using, stir in the chopped spinach or kale and red pepper flakes. Cook for an additional 5 minutes until the greens are wilted.

        • Remove the bay leaf and discard.

        • Stir in the lemon juice for a bright, fresh finish.

    1. Serve and Enjoy:
        • Ladle the soup into bowls.

        • Garnish with fresh parsley before serving.
