Peach Toasts with Honey and Cream Cheese Recipe

  • Author: Victoria

Ingredients

  • Bread: 4 thick slices (about ¾ to 1 inch thick) of good quality bread. Sourdough, brioche, challah, or a hearty whole grain loaf work exceptionally well.
  • Peaches: 2 large, ripe peaches (or 3 medium). Yellow or white peaches are both excellent choices. They should be fragrant and give slightly to gentle pressure.
  • Cream Cheese: 8 ounces (1 cup or 226g) full-fat cream cheese, softened at room temperature for easy spreading. For a lighter version, neufchâtel can be used.
  • Honey: 4 tablespoons (or to taste) of high-quality liquid honey. Consider raw, unfiltered honey, or specialty honeys like orange blossom or acacia for unique flavor notes.
  • Butter (Optional): 1-2 tablespoons unsalted butter, softened, for toasting the bread if not using a toaster.
  • Optional Garnishes:

    • Fresh mint leaves, chiffonade (thinly sliced)
    • Fresh basil leaves, chiffonade
    • A pinch of ground cinnamon or nutmeg
    • Toasted slivered almonds or chopped pistachios for crunch
    • A tiny sprinkle of flaky sea salt to enhance flavors

Instructions

  1. Prepare the Peaches:

    • Gently wash and dry the peaches.
    • Slice the peaches in half and remove the pit.
    • Cut the peach halves into relatively thin slices, about ¼ inch thick. You can leave the skin on for added texture and nutrients, or peel them if you prefer a smoother bite. Set aside.
    • Pro Tip: If you’re not using the peaches immediately, toss them with a tiny squeeze of lemon juice to prevent browning.

  2. Toast the Bread:

    • Toaster Method: Place the bread slices in your toaster and toast until golden brown and crispy to your liking.
    • Stovetop Method (for extra richness): Melt the optional butter in a large skillet or griddle over medium heat. Place the bread slices in the skillet and toast for 2-3 minutes per side, or until golden brown and slightly crispy.
    • Oven/Broiler Method: Preheat your broiler or oven to 350°F (175°C). Place bread slices on a baking sheet. If using the oven, bake for 5-7 minutes per side. If broiling, watch very carefully as they can burn quickly – usually 1-2 minutes per side.

  3. Prepare the Cream Cheese (Optional Flavor Boost):

    • While the bread is toasting, ensure your cream cheese is softened.
    • For an extra layer of flavor, you can whip the cream cheese with a teaspoon of vanilla extract or a ½ teaspoon of lemon zest until light and fluffy. This step is optional but adds a lovely dimension.

  4. Assemble the Toasts:

    • Once the bread is perfectly toasted, place the slices on individual plates or a serving platter.
    • While the toast is still warm, spread a generous layer (about 2 ounces or ¼ cup per slice) of softened cream cheese evenly over each slice.

  5. Add the Peaches:

    • Arrange the sliced peaches artfully on top of the cream cheese. You can overlap them slightly or create a fan pattern. Be generous with the peaches!

  6. Drizzle with Honey:

    • Generously drizzle the honey over the peaches and cream cheese. Use a spoon to create an even coating, or let it fall in enticing streams. Adjust the amount of honey to your preferred level of sweetness.

  7. Garnish (Optional):

    • If desired, sprinkle your chosen garnishes over the toasts. Fresh mint or basil adds a beautiful color contrast and fresh aroma. Cinnamon or nutmeg offers warmth, while toasted nuts provide a delightful crunch. A tiny pinch of flaky sea salt can surprisingly enhance the sweetness of the peaches and honey.

  8. Serve Immediately:

    • Peach toasts are best enjoyed immediately while the toast is still warm and crispy, and the peaches are fresh.
