Sausage and Egg Breakfast Roll Cups Recipe

  • 1 can refrigerated biscuit dough
  • 1 cup cooked turkey sausage, crumbled
  • 4 large eggs
  • 1/2 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Optional: diced bell peppers or onions

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the biscuit cups by rolling out the biscuit dough and flattening each piece. Press the flattened dough into a muffin tin to form cups.
  3. Mix the filling by whisking together the eggs, salt, and pepper in a bowl. Add in the turkey sausage, shredded cheese, and optional veggies, stirring until well combined.
  4. Fill the biscuit cups by pouring the egg mixture into each prepared biscuit cup, filling them about 3/4 full.
  5. Bake the cups for 15-20 minutes, or until the eggs are set and the biscuits are golden brown.
  6. Cool and serve by allowing the roll cups to cool slightly before removing them from the muffin tin. Enjoy your breakfast!
