For the Marinade
- Combine lemon juice, minced garlic, olive oil, honey, dried oregano, salt, and pepper in a large bowl until smooth, about 30 seconds.
- Add chicken drumsticks and turn to coat thoroughly. Cover and refrigerate at least 1 hour, preferably overnight.
For the Drumsticks
- Preheat your oven to 400°F (200°C) and position rack in the middle. Line a baking sheet with foil or parchment.
- Remove drumsticks from the marinade, shaking off excess. Place skin-side up on the baking sheet, spacing at least 2 inches apart.
- Roast in the oven for 35–40 minutes until the skin is golden-brown and a meat thermometer reads 165°F.
- Transfer drumsticks to a plate and let rest for 5 minutes.
- Sprinkle with chopped parsley and serve with lemon wedges.
