How to Make Baked Almond Date Bars
- Preheat the oven to 350°F (175°C) on the middle rack.
- Spread almonds on a baking sheet and toast in the preheated oven for 8–10 minutes.
- Pulse pitted Medjool dates in a food processor for about 30 seconds until they form a smooth, sticky paste.
- Add rolled oats, ground cinnamon, and a pinch of salt to the processor; pulse 3–4 times until blended.
- Pour in almond butter, honey (or maple syrup), and vanilla extract; pulse until the mixture holds together.
- Transfer the mixture to the prepared pan, pressing firmly to form an even layer.
- Bake in the preheated oven for 15–18 minutes until golden and set.
- Cool in the pan for 20 minutes, then lift out and cool completely on a wire rack.
- Cut into 12 even bars and enjoy or store airtight for up to one week.
