- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners or grease lightly.
- In a mixing bowl, whisk together rolled oats, flour, baking powder, cinnamon, salt, and brown sugar until evenly blended.
- In a separate bowl, whisk egg, milk, and vanilla extract until smooth and shiny.
- Gently stir the wet mixture into the dry ingredients, mixing just until combined.
- Using an ice cream scoop, portion batter evenly into the prepared cups, filling each about two-thirds full.
- Peel (optional) and dice fresh peaches, then toss with lemon juice and honey or maple syrup.
- Spoon 1–2 tablespoons of the peach mixture on top of each oat cup, gently pressing the fruit in.
- Place the tray in the preheated oven and bake for 20-22 minutes until golden brown.
- Let the oat cups rest in the tin for 5 minutes, then transfer to a wire rack to cool.
