  • 1 cup Zucchini sliced into rounds
  • 1 cup Red onion sliced thick
  • 1 cup Cherry tomatoes whole
  • 2 tablespoons Olive oil for coating
  • 2 teaspoons Italian herbs or rosemary fresh or dried
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Cooking Steps
  1. Preheat oven to 425°F. Toss carrots, bell peppers, zucchini, and red onion with olive oil, Italian herbs, salt, and pepper in a large bowl.
  2. Spread veggies in a single layer on a parchment-lined baking sheet. Roast for 20 minutes, stirring halfway.
  3. Pat salmon fillets dry. Brush with olive oil and lemon juice, sprinkle with minced garlic, dill, salt, and pepper.
  4. Nestle seasoned salmon fillets among the roasted vegetables. Bake for 10–12 minutes until salmon flakes easily.
  5. Let rest for 3 minutes before serving with fresh lemon.
