How to Make Coconut Curry Lentil Soup
  1. Heat oil over medium heat in a large pot. Add onion, garlic, and ginger. Cook until translucent, about 3–4 minutes.
  2. Stir in curry powder, turmeric, ground cumin, and cayenne pepper (if using). Cook for about 1 minute.
  3. Pour in red lentils, vegetable broth, and coconut milk. Stir to combine, then bring to a gentle boil.
  4. Reduce heat to low, cover the pot, and let simmer for about 20 minutes.
  5. Remove from heat. Blend to desired texture using an immersion blender.
  6. Stir in fresh lime juice and season with salt and pepper to taste.
  7. Ladle into bowls and garnish with cilantro, toasted coconut flakes, and lime wedges.
