How to Make Coconut Curry Lentil Soup
- Heat oil over medium heat in a large pot. Add onion, garlic, and ginger. Cook until translucent, about 3–4 minutes.
- Stir in curry powder, turmeric, ground cumin, and cayenne pepper (if using). Cook for about 1 minute.
- Pour in red lentils, vegetable broth, and coconut milk. Stir to combine, then bring to a gentle boil.
- Reduce heat to low, cover the pot, and let simmer for about 20 minutes.
- Remove from heat. Blend to desired texture using an immersion blender.
- Stir in fresh lime juice and season with salt and pepper to taste.
- Ladle into bowls and garnish with cilantro, toasted coconut flakes, and lime wedges.
