- Scoop ripe avocados into a food processor. Pulse until smooth and creamy, pausing to scrape down sides as needed.
- Sprinkle in unsweetened cocoa and blend on low until fully incorporated, about 30 seconds, ensuring no lumps remain.
- Pour in maple syrup (or honey), vanilla extract, and a pinch of salt. Blend 20–25 seconds until silky and evenly sweetened.
- Sample the pudding. Add more sweetener or cocoa to reach your desired richness and sweetness, blending briefly after each addition.
- Transfer mixture into serving bowls or jars. Cover and refrigerate for at least 1 hour to firm up and enhance flavor.
