- Heat olive oil in a skillet over medium-high heat. Brown chicken legs skin-side down until golden brown, about 3–4 minutes per side.
- Place sliced onions and minced garlic in the bottom of the crockpot.
- Whisk together chicken broth, heavy cream, and smoked paprika until smooth. Season with salt and pepper.
- Arrange seared chicken legs atop the onions, then pour the creamy paprika sauce over them.
- Cover and cook on low for 6–7 hours or high for 3–4 hours.
- Stir gently halfway through cooking.
- Let chicken rest in warm sauce for five minutes before serving.
