  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper Freshly ground

  • 1/4 cup chopped parsley For garnish

Method
 

How to Make
  1. Rinse and dry baby potatoes. Halve any large pieces for even cooking.
  2. Drizzle potatoes with olive oil and minced garlic. Add salt and pepper, tossing to coat.
  3. Place rosemary and thyme sprigs inside the crockpot.
  4. Transfer the seasoned potatoes into the crockpot, spreading evenly.
  5. Cover and cook on low for 6–7 hours until fork-tender.
  6. Uncover, discard herb stems, then gently stir and fluff potatoes.
  7. Transfer to a serving dish and garnish with parsley and lemon zest.
