Method
 

Steps

  2. In a food processor, pulse the Medjool dates, oats, shredded coconut, flaxseed, honey, vanilla, and salt until clumped.
  3. Stir in optional chopped nuts, cinnamon, or dark chocolate chips.
  4. Transfer mixture to the pan and press evenly with a spatula.
  5. Bake for 15–20 minutes until edges are golden and centers remain chewy.
  6. Cool in the pan for at least 30 minutes before slicing.
  7. Slice into 12 squares and enjoy or store.
