How to Make Ground Chicken & Sweet Potato Skillet
- In a large skillet, warm olive oil over medium heat until shimmering.
- Add diced sweet potatoes, season with salt and pepper, and cook 5–7 minutes, stirring often.
- Push sweet potatoes aside, then stir in chopped onion and minced garlic. Sauté 2–3 minutes.
- Crumble in lean ground chicken, cook 5–7 minutes until no longer pink.
- Sprinkle smoked paprika, ground cumin, salt, and pepper. Stir to combine and cook 1 minute more.
- Reduce heat to low, cover skillet, and let cook 3–4 minutes.
- Uncover and fold in fresh spinach or kale. Cook 1–2 minutes until wilted.
- Transfer to warm plates, sprinkle chopped cilantro and red chili flakes, and serve immediately.
