For the Marinade
- Mix marinade ingredients: in a medium bowl whisk 3 cloves minced garlic, ¼ cup honey, 2 Tbsp soy sauce, 1 Tbsp olive oil, a pinch of salt and pepper.
For the Marinade
- Marinate chicken: place 4 bone-in, skin-on chicken thighs in the bowl, flipping to coat evenly. Let rest at room temperature for 10–15 minutes.
For Cooking
- Heat oil: warm 1 Tbsp olive oil in a large skillet over medium-high heat until it shimmers, about 2 minutes.
- Sear thighs: arrange chicken skin-side down, pressing gently. Cook 7–8 minutes until skin is golden brown and crisp.
- Glaze chicken: pour reserved marinade into skillet, reduce heat to medium. Simmer 5–7 minutes, basting thighs with the sauce.
- Check doneness: insert thermometer into thickest part, it should read 165°F.
To Serve
- Rest meat: transfer chicken to a plate and rest 5 minutes loosely covered with foil.
- Garnish finished dish: sprinkle chopped parsley or sliced green onions over chicken.
