Preparation
- Preheat the oven to 350°F.
- In a large bowl, gently toss ripe strawberries with granulated sugar, cornstarch, lemon juice, and vanilla extract.
Crisp Topping
- In a mixing bowl, stir together rolled oats, brown sugar, all-purpose flour, and ground cinnamon.
- Scatter cold, cubed unsalted butter over the oat mixture and cut in until coarse crumbs form.
- Transfer the strawberry filling to a greased baking dish, then evenly sprinkle the crisp topping over the fruit.
- Bake at 350°F for 35–40 minutes until the topping is deep golden brown and filling is bubbling.
- Allow to cool for about 10 minutes before serving.
