Directions
- Preheat oven to 375°F and lightly oil a deep baking dish or ovenproof skillet.
- Pat 1½ pounds chicken thighs dry, sprinkle salt, pepper, and Italian seasoning over both sides.
- In a bowl combine diced tomatoes, tomato paste, minced garlic, chopped onion, and chicken broth. Stir until blended.
- Spread 1 cup rice evenly in the dish. Pour the tomato mixture over rice, stirring gently.
- Nestle the seasoned chicken thighs on top of the rice mixture, skin side up.
- Cover with foil and bake at 375°F for 40 minutes. Remove foil, bake for 10 more minutes until golden, then let rest for 5 minutes.
