  • 1.5 pounds chicken thighs bone-in or boneless
  • 1 cup long-grain white rice stays fluffy
  • 2 cups chicken broth homemade or low-sodium
For the Tomato Base
  • 1 can diced tomatoes fire-roasted for smokiness
  • 2 tablespoons tomato paste enhances richness
  • 3 cloves garlic minced
For Flavor & Seasoning
  • 1 medium onion finely chopped
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Optional Add-ins
  • 1 cup bell peppers diced
  • 1/2 cup Parmesan cheese for topping
  • 1/4 cup fresh basil or parsley for garnish

Method
 

Directions
  1. Preheat oven to 375°F and lightly oil a deep baking dish or ovenproof skillet.
  2. Pat 1½ pounds chicken thighs dry, sprinkle salt, pepper, and Italian seasoning over both sides.
  3. In a bowl combine diced tomatoes, tomato paste, minced garlic, chopped onion, and chicken broth. Stir until blended.
  4. Spread 1 cup rice evenly in the dish. Pour the tomato mixture over rice, stirring gently.
  5. Nestle the seasoned chicken thighs on top of the rice mixture, skin side up.
  6. Cover with foil and bake at 375°F for 40 minutes. Remove foil, bake for 10 more minutes until golden, then let rest for 5 minutes.
