  • 1 pound fresh white fish fillets flaky, mild fish like snapper or cod
  • 4 cloves garlic finely minced
  • 2 pieces fresh chili peppers sliced thinly
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 2 tablespoons vegetable oil neutral oil for high-heat cooking
  • 1 teaspoon sugar just a pinch
For Serving and Garnish
  • 1/4 cup fresh cilantro sprinkled on top
  • 2 pieces lime wedges to squeeze over before serving
  • 2 cups steamed jasmine rice the perfect companion

Method
 

Steps
  1. Pat fish fillets dry and slice into bite-size pieces.
  2. Warm vegetable oil in a large skillet over medium-high heat until shimmering.
  3. Add minced garlic and sliced chilies, stirring constantly for about 30 seconds.
  4. Place fish pieces in a single layer, cooking undisturbed for 2 minutes. Flip and cook another 1-2 minutes.
  5. Mix fish sauce, soy sauce, and sugar in a small bowl until sugar dissolves.
  6. Pour the sauce over the fish and stir gently for 1 minute until all pieces are evenly coated.
  7. Remove skillet from heat, top with cilantro and lime, then serve immediately over rice.
