Steps
- Pat fish fillets dry and slice into bite-size pieces.
- Warm vegetable oil in a large skillet over medium-high heat until shimmering.
- Add minced garlic and sliced chilies, stirring constantly for about 30 seconds.
- Place fish pieces in a single layer, cooking undisturbed for 2 minutes. Flip and cook another 1-2 minutes.
- Mix fish sauce, soy sauce, and sugar in a small bowl until sugar dissolves.
- Pour the sauce over the fish and stir gently for 1 minute until all pieces are evenly coated.
- Remove skillet from heat, top with cilantro and lime, then serve immediately over rice.
