- In a large bowl, combine rolled oats, peanut butter, honey and vanilla extract. Stir vigorously until the mixture appears evenly moistened and holds together loosely, about 2 minutes.
- Fold in dark chocolate chips, chia seeds or dried cranberries now. This helps distribute flavors evenly throughout the mix.
- Transfer the bowl to the refrigerator and let chill for at least 10 minutes.
- Scoop about one tablespoon of mixture and roll into balls (about 1 inch).
- Arrange the shaped bites on a parchment-lined tray. Return to the fridge for an additional 20–30 minutes.
- Enjoy immediately or store in an airtight container for up to 1 week.
