Preparation Steps
- Preheat oven to 350°F and position rack in center. Line an 8×8-inch pan with parchment.
- In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, salt, granulated sugar, and brown sugar until combined.
- In a separate bowl, whisk together eggs, oil, and vanilla extract until smooth and pale.
- Pour wet mixture into dry ingredients, stirring gently until just combined.
- Fold in grated carrots and optional add-ins until evenly distributed.
- Spread batter into prepared pan and bake for 25–30 minutes until golden brown and a toothpick comes out clean.
- Cool in pan for 15 minutes then lift out using parchment overhang and cool completely before slicing.
