How to Make Sticky Apricot Glazed Chicken Drumsticks
- Preheat to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a medium bowl, whisk apricot jam, soy sauce, minced garlic, apple cider vinegar, and olive oil until smooth; scoop out and reserve 2 tablespoons of glaze for brushing later.
- Add drumsticks to the bowl and toss until each piece is evenly coated; let them rest at room temperature for 15 minutes.
- Transfer chicken pieces skin-side up onto the prepared sheet, spacing them evenly.
- Slide the sheet into the preheated oven and roast for 25 minutes.
- Brush each drumstick with the reserved apricot glaze and return to the oven for another 10–12 minutes until sticky and caramelized.
- Let the drumsticks rest for 5 minutes; finish with a sprinkle of fresh parsley and optional chili flakes.
