Method
 

For the Coconut Rice
  1. Rinse jasmine rice under cold water until liquid runs clear, gently stirring for 30 seconds.
  2. In a saucepan, combine coconut milk, water, and salt; bring to a gentle boil over medium heat, stirring occasionally.
  3. Add rinsed rice, reduce heat to low, cover, and simmer for 15 minutes until liquid's absorbed and rice is tender.
  4. Remove from heat and let rice steam, still covered, for 10 minutes.
For the Toppings
  1. Peel and cube mango into bite-sized pieces.
  2. Toast shredded coconut and peanuts in a dry skillet over low heat for 3-4 minutes, stirring continuously.
  3. Arrange coconut rice in bowls, top with mango, coconut, peanuts, and mint.
  4. Squeeze lime wedges and drizzle honey or syrup over each bowl.
