Cooking Instructions
  1. Rinse jasmine rice under cold water until clear, then combine with vegetable broth in saucepan. Boil, cover, reduce heat, and simmer for 15 minutes until fluffy.
  2. Warm neutral oil in a large skillet over medium heat until shimmering, about 1 minute.
  3. Add minced garlic cloves and sauté over medium heat for 1-2 minutes until fragrant and lightly golden.
  4. Toss in broccoli florets, julienned carrots, bell peppers, and snap peas. Stir-fry for 4-5 minutes until bright and crisp-tender.
  5. Pour in soy sauce, lime juice, brown sugar, and chili flakes. Stir for 2 minutes until sauce thickens slightly.
  6. Divide rice between bowls, top with garlic veggies, and sprinkle with fresh cilantro, crushed peanuts, and green onions. Serve hot.
