Marinade
- Combine pure maple syrup, Dijon mustard, soy sauce, minced garlic, lemon juice, olive oil, salt, and pepper in a bowl until smooth and well blended.
- Marinate chicken pieces in the maple mixture, turning to coat all sides. Cover and refrigerate for at least 30 minutes (up to 2 hours).
Baking
- Preheat oven to 400°F (200°C) and position a rack in the center. Line a baking sheet with foil or parchment paper.
- Arrange chicken skin-side up on the sheet, reserving extra marinade for basting.
- Bake chicken on the middle rack for 25–30 minutes until skin is golden brown and caramelized. Check with a thermometer to reach 165°F (74°C).
- Rest baked chicken on a warmed platter for 5 minutes before serving.
