Method
 

Preparation Steps
  1. Preheat the oven to 425°F on the middle rack.

  3. Rub the garlic-herb paste all over the beef rib roast, pressing to adhere.
  4. Place roast in the oven at 425°F for 15 minutes until the exterior is golden brown.
  5. Lower the oven to 325°F and roast about 15 minutes per pound or until the internal thermometer reads 125°F.
  6. Transfer the beef to a cutting board, loosely tent with foil, and let rest for 20 minutes.
  7. Carve the roast into thick slices, arrange on a platter, garnish with fresh parsley, and serve immediately.
