How to Make Beef and Root Vegetable Bake
- Preheat the oven to 350°F (175°C) while you prep all ingredients.
- Heat olive oil over medium-high heat in a large ovenproof skillet. Sear beef cubes until golden brown on all sides, about 4 minutes per batch.
- Toss carrots, parsnips, and potatoes with olive oil, salt, and pepper. Spread around beef for even roasting.
- Pour beef broth over meat and vegetables, stir in tomato paste and thyme. Coat everything evenly.
- Cover skillet and bake at 350°F for 1 hour, until beef is fork-tender and vegetables are soft.
- Let the bake rest for 10 minutes before garnishing with chopped parsley. Serve directly from the skillet.
