  • 3 large eggs
  • 1 teaspoon cinnamon

Method
 

For the Fruit Blend
  1. Combine mixed dried fruits and glacé cherries in a bowl, pour brandy or orange juice over them, and let sit overnight.
  2. Add chopped walnuts or pecans, tossing gently to coat.
For the Batter
  1. In a large bowl, beat softened butter with brown sugar until light and fluffy.
  2. Crack in eggs one at a time, mixing well after each addition.
  3. Sift in all-purpose flour along with cinnamon, cloves, and nutmeg, stirring gently.
  4. Stir in the drained fruit blend and chopped nuts until evenly distributed.
Baking
  1. Grease and line a 9×5-inch loaf pan.
  2. Transfer the batter to the prepared pan and bake in a preheated oven at 325°F for 60–70 minutes.
  3. Let the cake rest in the pan for 10 minutes before transferring to a wire rack and brushing with golden syrup.
