How to Make Mexican Lasagna
  1. Preheat your oven to 375°F (190°C), positioning the rack in the center.
  2. In a large skillet over medium-high heat, cook ground beef until fully browned, about 5–7 minutes.
  3. Add diced onion and minced garlic to the skillet, sautéing until onions are translucent and garlic is fragrant, about 3–4 minutes.
  4. Stir in black beans, sweet corn kernels, and chopped green chilies; cook for 2–3 minutes.
  5. Pour in chunky salsa and tomato sauce, stirring until the sauce simmers and thickens, about 2–3 minutes.
  6. Spread a thin layer of the prepared filling in a baking dish, top with tortillas, and repeat two more times.
  7. Sprinkle shredded Mexican blend cheese over the top layer and dot with cream cheese.
  8. Bake in the preheated oven for 20–25 minutes until cheese melts and edges turn golden brown.
